A few months ago we went to a friend’s place for lunch, where they served baked kumara (sweet potato). The meal was delicious and I have been wanting to try it at home ever since. We live close to a wonderful wholesale fruit and vegetable supplier, Bushy Park. They stock a wide range of fruit, veggies, herbs, nuts, dairy and breads. The staff are super friendly and helpful – handing out free bananas to the kids and carrying your purchases to your car. A recent trip to buy nuts saw me walking out with a whole box of luscious fruit and vegetables, including a couple of Kumaras perfect for dinner. This was the result…

Method

  1. Pre-heat oven to 180°C
  2. Wrap kumara’s in foil and place on a baking tray
  3. Bake for 2 ½ hrs (or until a skewer easily slides in)
  4. Unwrap and cut kumara length ways
  5. Add your favourite toppings
